Gruyere Popovers
3 cups milk
3 cups flour
1 Tbs kosher salt
6 eggs
6 oz Gruyere cheese, grated
Preheat oven to 400 degrees.
Warm milk in small saucepan over medium-high heat. Put flour & salt in fine-mesh sieve; sift onto sheet of waxed paper. In large bowl, whisk eggs until frothy, and then whisk in hot milk. Gradually whisk in flour mixture until almost smooth.
Spray 6-cup popover pan with Pam.
Fill cups three-fourths full, sprinkle with cheese.
Bake 15 minutes; rotate pan 180 degrees. Continue baking until popovers are browned and puffed, 30 min more.
Invert pan and remove popovers. Voile! Repeat with the remainder of the batter. Makes 12 popovers.
